Late winter - early spring was when the 18th century diet was full dishes using root vegetables. In this episode we make a very yummy carrot pudding from Rebecca Price's late 17th century cookbook.
RECIPE: Start with wet ingredients. Combine four egg yokes and two egg whites beaten, a cup of milk, a table spoon of honey, two ounces of sack, a pinch of nutmeg and mix well. Add eight ounces of shredded carrots and six ounces of bread crumbs. Stir in two ounces of Melted butter. Bake in a pre-buttered dish for 30-40 minutes at 350 degrees.

Today we prepare a delicious Carrot Custard from Amelia Simmons - 1796 American Cookery. A very similar recipe to last week's Carrot Pudding, but much more of a custardy flavor.
RECIPE: Start with about a cup of boiled and mashed carrots. Mix in five whisked eggs, two ounces of butter, two ounces of sugar, and about a teaspoon of cinnamon. Bake in a pre-buttered deep dish for about an hour at 350 degrees.

Wine Custard, or Posset - 18th Century Cooking S6E5

Today we prepare an 18th Century "Posset" or what we might call today a "Wine Custard". This recipe comes from the 1747 Cookbook - The Art Of Cookery, written by Hannah Glass. RECIPE: 1 pint of milk heat slowly to boil and stir in 1/4 to 1/2 cup of bread crumbs while stirring continually. Take of fire and cover. In a bowl whisk two egg yokes with 1/2 cup of dry sherry and 1/4 to 1/2 cup of sugar. Add 1/4 teaspoon of nutmeg. Stir all together, pour into serving dish and garnish with cinnamon.

"Pig in a blanket" is a familiar term to many, possibly conjuring memories of childhood. Here's a more refined recipe by a similar name from Ann Cook's 1755 cookbook, "Professed Cookery." This dish exemplifies 18th century cuisine. Elsewhere in the cookbook, it's suggested that this dish could be baked, but the author recommends boiling because it was far too inefficient to bring the wood-fired oven up to temperature. If you want the authentic version, boil it. For a more modern take, bake it. Either way, it's quite delicious!

Jon and Ivy are planting an 18th century kitchen garden! There were different types of gardens; this one is more of a "soup herb" garden containing several "sweet herbs" that were usually bundled and tossed into soups or sauces for extra flavor. The herbs in this video are just a few of the many possibilities. We made our list from the suggestions found in the 1778 book, "The Universal Gardener and Botanist." The recipes in period cookbooks offer other great ideas as well.
